Physicochemical and Physiological Erythritol Properties

Table of Content [Hide]

Erythritol is a natural sugar alcohol-filling sweetener. It forms a colourless solution after being dissolved in water, and the solution's viscosity is very low. It is widely distributed in nature, such as seaweed, mushrooms, melons, grapes and other fruits, mosses, microorganisms, fermented foods and animal body fluids such as human eyeballs, serum, and semen.

    1. Physical and chemical erythritol properties

The sweetness characteristics of erythritol and sucrose are very close and without bad bitterness, and the sweetness is about 60% to 70% of sucrose. It has a strong cooling effect when dissolved in water, and it tastes cool when eaten.

When combined with high-intensity sweeteners such as aspartame or acesulfame potassium, erythritol can mask the unpleasant flavor or taste that high-intensity sweeteners typically carry.

    2. Physiological erythritol properties

The metabolic pathway of erythritol has nothing to do with insulin or is rarely dependent on insulin. 90% of erythritol entering the body is excreted in urine, which basically does not cause changes in blood sugar. The low energy value is suitable for the consumption of three high patients and diabetic patients.

Erythritol produced by erythritol manufacturers cannot be utilized by cariogenic bacteria streptococcus mutans, and higher concentrations of erythritol have a certain inhibitory effect on Streptococcus mutans, so erythritol cannot cause dental caries. When studying the effects of erythritol, xylitol and sorbitol on dental caries, it was found that the cariogenicity of erythritol was the lowest among the three sugar alcohols.

The addition of sugar alcohol products to beverages also involves the issue of tolerance, while erythritol has a relatively high tolerance without side effects.

It has been proved by a large number of animal and clinical trials that erythritol has no teratogenic toxicity, does not affect reproduction and development, does not cause chromosomal mutation, does not cause cancer, and does not stimulate tumor growth. The digestive tract has a good tolerance to it.
