Soy Protein Concentrate

By removing a certain percentage of carbohydrates from dehulled and defatted soybean, soy concentrate can be obtained. Generally speaking, one ton of defatted soy flakes can extract about 750 kg of soy protein concentrate. Soy protein can be produced in many ways. The most commonly used method is extraction with alcohol, although this method causes most of the soy isoflavone loss. However, water extraction is used to remove sugar, and isoflavones are well retained in this way. Soy protein concentrate retains most of the fiber of the original soybean and is very easy to digest, so it is suitable for children, pregnant and lactating women, and the elderly. It is also found in pet food and milk replacers for calves and pigs. The protein content of textured soy protein concentrate is about 70%. It can produce products with a similar structure to meat by extrusion cooking process.

Recommended Application Method of Soy Protein Concentrate

1. Put YP701B into the ingredients at the ratio of 3%-5% and chop them together.
2. Chop YP701B into emulsion lumps at the ratio of 1:5.75:5.75 then put it into the products.

Quality Requirements for Soy Protein Concentrate

Soy protein concentrate should contain at least 70% anhydrous protein. Depending on the extraction method, the protein may have different solubility characteristics. Some applications, such as beverages, require highly soluble proteins. The soy protein concentrate made by washing with alcohol will have low solubility, and the solubility can be increased by further processing, for example, by neutralizing the acid washing concentrate with alkali. Soy protein concentrate comes in different forms: granules, flour and spray-dried. Most typical soy flavors are usually removed during the extraction process, resulting in a flat taste in the final product. Gas-producing sugars, raffinose and stachyose can also be removed by the solvent used to produce soy protein concentrate.


Soy Protein Concentrate VS Isolate

These two protein sources are not derived from the same process or used for the same purpose.

Since soy protein isolate contains up to 90% crude protein, one might think that, considering the cost, a more concentrated source can be used as effectively as soy protein concentrate. This is due to the misunderstanding that the two protein sources come from the same process, one is more concentrated than the other. The difference lies in the unwanted compounds. However, this is far from the truth.


In fact, these two soy protein sources are manufactured using completely different processes. The differences also extend to the main uses of these products: soy protein isolate is the main protein source for human nutrition products, while soy protein concentrate is used in animal feed. A large amount of soy protein isolate, mainly from Asia, has prompted many manufacturers to consider using this ingredient (which is often sold at a discount due to quality issues and will not affect the animals) for special feeds such as milk replacers, piglet feeds and broiler super pre-production.
