The Chemical Structure Of Soybean Protein Fiber Molecule

Table of Content [Hide]

Soy protein fiber is composed of two components of polyvinyl alcohol and soybean protein. Polyvinyl alcohol is a carbon chain polymer. The macromolecules are connected by carbon-carbon chains, and the molecular chain contains a large number of hydroxyl groups. On average, there are 1 400-1 800 macromolecules. Due to the polar effect of the hydroxyl group, the flexibility of the carbon molecular chain is reduced, and it is a relatively rigid macromolecule. Soy protein is a natural hetero-chain polymer. The macromolecules are connected to each other by amide bonds, and the chain segment length is small, which is a flexible chain. Because soy protein macromolecules have large branched chains, the conformation of the macromolecules is in a spiral shape.
